The Veggie Patch Begins... Herbs for Sandwiches

We're trying a touch of the Good Life... You know, growing our own.

For many years we've deliberated: should we, shouldn't we. It'll mess up the garden...
But this year, a spur of the moment thing really, we set to and dug the veggie patch. Well, to be honest, hubbie did the hard graft. I just cleared away the turf...
The kids are excited, we planted the seeds in the seed trays several weeks ago and planted the seeded potatoes out there in the brand new veggie patch. We are off the starting blocks!

We deliberated the where, the what, the why, and after much discussion around the kitchen table, and huddled around the seed packet aisles, we settled on the family favourites - fresh potatoes, french beans, red onions, cherry tomatoes, cornichons (the mini pickled gherkins), peppers and pumpkins.  We shall see what we manage to cultivate and how green fingered we really are!
We'll keep popping back and let you know how the veggie patch is going. It's been so wet the last couple of days that I haven't managed to get out there and take some snaps (but it has saved me from watering the garden though), so do check back, we will keep you uptodate with the goings on down at the veggie patch...

We'll be doing a little kitchen herb garden too, so we can pop those fresh herbs in the lunch box...

Parsley is a multi-purpose herb, and in our lunch box tips and hints, is often recommended for removing those unpleasant lingering smells from you lunch bag, which can be off-putting for anyone opening up the lunch box...

Chives is the smallest, and delicately flavoured member of the onion family, great in dips and salads.

Basil, a versatile and aromatic herb, is perfect with tomatoes and in the recipe below.

Mint is essential for those long summer drinks.

We're hoping to taste that freshly picked produce in the coming weeks and to be really proud we've grown our own. Here's a tempting sandwich recipe to maybe persuade you...
